Ingredients
Instructions
- 1
Heat the oven to 190°C/375°F. Grease a 23 × 33 cm baking dish.
- 2
Warm 1 tablespoon of oil in a skillet. Cook the onion and bell pepper for about 5 minutes, until softened. Stir in the diced ham and warm through. If using bacon, cook it separately until crisp, drain it well, and add it here.
- 3
Spread the frozen hash browns in the baking dish. Add the ham or bacon mixture, then sprinkle over the cheddar.
- 4
Whisk the eggs, milk, salt, pepper, and garlic powder together. Pour evenly over the casserole.
- 5
Bake for 40–45 minutes, until set in the center. Measure the center with a food thermometer; the egg casserole must reach at least 71°C/160°F.
- 6
Rest for 5–10 minutes, garnish with parsley, and slice. That rest is what keeps each piece from tumbling apart.
