This delectable dish not only satisfies your beef cravings but also incorporates quinoa for a nutritious boost. Perfect for sustaining our home front efforts!
Ingredients
- 500 grams lean beef (sliced thinly)
- 1 cup quinoa
- 2 cups beef stock (homemade if possible, but any will do)
- 1 medium onion (finely chopped)
- 200 grams mushrooms (sliced)
- 1 cup sour cream (or natural yogurt for a lighter touch)
- 2 tablespoons vegetable oil (or dripping if you have it)
- 1 tablespoon flour (to thicken the sauce)
- 1 teaspoon Dijon mustard (if available for a touch of flavour)
- Salt and pepper to taste
- Fresh parsley (for garnish if desired)
Instructions
-
Rinse the quinoa under cold water and cook according to package instructions. Usually, this means boiling it in twice the amount of water (2 cups), simmering until fluffy.
-
In a large pan, heat the vegetable oil over medium heat. Add the onions and sauté until they turn translucent.
-
Increase the heat to medium-high, and add the sliced beef. Cook until browned on all sides. Remove the beef and set aside.
-
In the same pan, add the mushrooms and cook until they release their moisture and are nicely browned.
-
Sprinkle the flour over the mushrooms and stir well. Slowly add in the beef stock while stirring, ensuring there are no lumps.
-
Allow the sauce to simmer for a few minutes until slightly thickened.
-
Lower the heat and stir in the sour cream (or yogurt) and Dijon mustard. Return the beef to the pan and cook gently until heated through. Season with salt and pepper to taste.
-
Serve the creamy beef mixture over a bed of fluffy quinoa, garnished with fresh parsley if available.
Flavor Profile
This dish marries the hearty flavor of beef with a creamy sauce that is light yet satisfying. The nuttiness of quinoa adds depth without overwhelming, while the mustard lends a gentle tang.
Ration Conformance
In this recipe, we’ve kept the portions of meat modest while incorporating quinoa, which is a filling, protein-rich substitute for traditional pasta or rice. The use of sour cream can be moderated to maintain our ration points, ensuring you enjoy that creamy texture without excess.
