Creamy Chicken and Rice Casserole

Ingredients
- 1 cup rice (uncooked)
- 1 can cream of chicken soup
- 2 cups chicken broth
- 1 can black beans (drained and rinsed)
- 1 cup green beans (chopped)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon paprika (optional)
- 1 teaspoon dried thyme (optional)
- 1 cup spinach (chopped, for extra nutrition)
- 1 cup cooked chicken (if you have any; you can also use canned tuna)
- Optional toppings: sliced almonds for crunch
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the uncooked rice, cream of chicken soup, chicken broth, black beans, green beans, chopped onion, minced garlic, salt, pepper, paprika, and thyme. Stir until well mixed.
- If using, fold in the cooked chicken or tuna and chopped spinach.
- Pour the mixture into a greased 9x13 inch casserole dish, spreading it evenly.
- Cover the dish with aluminum foil and bake for 30 minutes.
- After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the rice is fully cooked and liquid is absorbed.
- Let it cool for a few minutes before serving. If desired, sprinkle with sliced almonds for a crunchy topping.
