Creamy Chicken and Spinach Bake for One

- 1 Chicken thigh
- 1/2 cup frozen spinach (thawed and drained)
- 1/4 cup ricotta cheese
- 2 tablespoons Greek yogurt
- 1/4 cup frozen onions
- 1/4 cup frozen carrots
- 1/4 cup frozen broccoli
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- 1/2 tsp thyme
- Salt and pepper, to taste
- 1 tablespoon grated cheese (optional, for topping)
Instructions
- Preheat your oven to 375°F (190°C).
- In a small bowl, combine the thawed and drained spinach with ricotta cheese and Greek yogurt. Stir well until smooth.
- In a skillet, cook the frozen onions, carrots, and broccoli over medium heat until the onions are translucent and the vegetables are tender. Add the chicken thigh to the skillet, season with garlic powder, paprika, oregano, thyme, salt, and pepper. Cook until the chicken is browned on both sides.
- Transfer the chicken thigh and vegetables to a small baking dish. Spread the creamy spinach mixture over the chicken, ensuring it's well covered.
- If desired, sprinkle grated cheese on top for an extra cheesy finish.
- Bake in the preheated oven for about 25-30 minutes or until the chicken is cooked through and the top is slightly golden.
