There's nothing quite like the cozy warmth of homemade mac and cheese. This version is quick and easy, making it perfect for a comforting meal on a busy day!
Ingredients
- 8 ounces elbow macaroni
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 2 cups milk (whole or 2% for creaminess)
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper, to taste
- Optional: Chopped parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add the macaroni and cook according to package directions until al dente. Drain and set aside.
- In the same pot, melt the butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 1 minute to create a roux.
- Gradually pour in the milk, whisking to avoid lumps. Continue to cook, stirring frequently, for 5-7 minutes, or until the mixture thickens slightly.
- Reduce the heat to low, and stir in the shredded cheddar and mozzarella cheeses until melted and smooth.
- Add the cooked macaroni to the cheese sauce, stirring until well combined. Season with garlic powder, onion powder, paprika, salt, and pepper to taste.
- Serve warm, garnished with fresh parsley if desired.
