Creamy Gourmet Mushroom Soup with Ginger

This luxurious soup combines the earthy flavors of multiple mushrooms with a warm hint of ginger, creating an inviting and complex flavor profile. It’s perfect for those cozy days when you want something rich and satisfying.
Ingredients
- 8 oz crimini mushrooms, chopped
- 6 oz portabella mushrooms, chopped
- 6 oz king oyster mushrooms, chopped
- 3.5 oz brown beech mushrooms, chopped
- 11 oz enoki mushrooms, trimmed
- 1 cup green peas (optional, fresh or frozen)
- 1 medium onion, diced
- 2 stalks celery, diced
- 2 ripe tomatoes, diced
- 1/4 cup fresh parsley, chopped
- 4 cups vegetable broth
- 1/2 cup heavy cream (or coconut cream for dairy-free)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1-inch piece of fresh ginger, grated (or minced)
- Salt and pepper to taste
- Optional: a pinch of nutmeg for a warm flavor
Cooking Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and celery and sauté until softened, approximately 5 minutes.
- Stir in the minced garlic and grated ginger; cook for an additional minute until fragrant.
- Add all the chopped mushrooms (including the enoki) to the pot. Sauté for about 7-10 minutes, or until the mushrooms are softened and starting to brown.
- Add the diced tomatoes and cook for another 5 minutes, allowing the tomatoes to break down a bit.
- If using, stir in the green peas and vegetable broth. Bring to a boil, then reduce the heat and let simmer for 15 minutes.
- Use an immersion blender to puree the soup until smooth (or blend in batches in a regular blender). If you prefer a more rustic texture, feel free to leave some chunks.
- Return the soup to the heat, and stir in the heavy cream. Season with salt, pepper, and a pinch of nutmeg if desired. Simmer for another 5 minutes to heat through.
- Serve the soup hot, garnished with fresh parsley.
