Creamy Oyster Soy Braised Chicken Thighs

Ingredients
- 4 chicken thighs (bone-in, skin-on or skinless)
- Salt and pepper, to taste
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 small onion, finely chopped
- 1/4 cup oyster sauce
- 1/4 cup soy sauce
- 1 cup heavy cream
- 1 tablespoon honey or sugar (optional, for sweetness)
- 1 tablespoon cornstarch (optional, for thickening)
- Fresh herbs for garnish (like parsley or cilantro)
Instructions
- Season the chicken thighs with salt and pepper on both sides.
- In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken thighs, skin-side down. Sear them until golden brown, about 5-7 minutes per side. Remove from the skillet and set aside.
- In the same skillet, reduce the heat to medium and add the chopped onion and minced garlic. Sauté until softened, about 3-4 minutes.
- Pour in the oyster sauce and soy sauce, stirring to combine. If you like a touch of sweetness, add honey or sugar at this stage.
- Return the chicken thighs to the skillet, nestling them among the sauce. Pour in the heavy cream and bring it to a gentle simmer.
- Cover and cook for about 25-30 minutes, or until the chicken is cooked through and tender.
- If you’d like a thicker sauce, mix the cornstarch with a little water to create a slurry, and stir it into the sauce. Cook for an additional 5 minutes until thickened.
- Serve hot, garnished with fresh herbs, over rice or noodles to soak up that delicious sauce.
