There's something about a warm bowl of creamy potato soup that brings me back to cozy evenings spent in the kitchen, watching the world outside as the rain falls. This soup is simple yet filled with love and flavor—a true heart-warming meal.
Ingredients:
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 3 cups of milk
- 2 tablespoons of flour
- 3 tablespoons of butter
- Salt and pepper to taste
- Optional toppings: chives, cheese, or bacon bits
Instructions:
- In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced potatoes and cover with water, bringing it to a boil. Cook until potatoes are tender, about 15-20 minutes.
- Once the potatoes are tender, reduce the heat. Use a potato masher to mash some of the potatoes for a chunkier soup, or blend for a creamier texture.
- In a separate bowl, whisk together the flour with a cup of milk to create a slurry.
- Slowly add the remaining milk to the potato mixture, stirring well. Then gently add the flour slurry, combining everything.
- Cook the soup on medium-low heat, stirring frequently, until it thickens (about 5-10 minutes).
- Season with salt and pepper to taste.
- Serve hot, garnished with optional toppings like chives, cheese, or bacon bits.
Flavor Profile:
This soup is creamy and rich, with a mild potato flavor that's enhanced by the sweet notes of sautéed onions. Seasoned well, it can be comforting but also has the depth of flavor you would expect from a warm, hearty soup.
