- 1 cup arborio rice
- 4 cups vegetable or chicken broth
- 1 cup white wine (optional; can replace with more broth)

- 8 ounces mixed mushrooms (like cremini, shiitake, and button), sliced
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream or half-and-half
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried rosemary)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Truffle oil (for drizzling, optional)
Cooking Instructions
- In a medium saucepan, heat the broth over low heat. Keep it warm throughout the cooking process.
- In a large skillet, add the olive oil and butter over medium heat. Add the onions and garlic, sautéing until softened, about 3-4 minutes.
- Stir in the mixed mushrooms and cook until they're browned and tender, approximately 5-6 minutes.
- Add the fresh thyme and rosemary, cooking for an additional minute to release their aromatic oils.
- Mix in the arborio rice, stirring to coat the grains for about 1-2 minutes until lightly toasted.
- Pour in the white wine (if using), stirring constantly until it's mostly absorbed by the rice.
- Begin adding the warm broth, one ladle at a time, stirring continuously. Allow the rice to absorb most of the liquid before adding the next ladle, about 18-20 minutes total, until the rice is creamy and al dente.
- Stir in the heavy cream and Parmesan cheese, and season with salt and pepper to taste for an extra creamy texture.
- Serve hot, garnished with chopped parsley and a drizzle of truffle oil.
