DiabeticFriendly Cocoa Chicken Kebabs

Ingredients:
- 1 pound boneless, skinless chicken breasts (cut into 1 inch cubes)
- 3 tbsp cocoa powder (unsweetened)
- 1 tbsp garlic powder
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tbsp liquid stevia (or any other sugar substitute)
- 2 tbsp apple cider vinegar
- 3-4 bell peppers (cut into 1 inch pieces)
- 1 large red onion (cut into 1 inch pieces)
- 8-10 skewers
Instructions:
- In a large mixing bowl, whisk together cocoa powder, garlic powder, olive oil, ground cumin, salt, black pepper, liquid stevia, and apple cider vinegar until it forms a smooth paste.
- Add cubed chicken into the mixing bowl and stir in until the chicken is coated evenly. Let it marinate in the fridge for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat or preheat the oven to 375°F.
- Thread the chicken onto skewers, alternating with peppers and red onions pieces.
- Place the skewers on the grill and cook for 10-15 minutes, or until the chicken is no longer pink or the internal temperature reaches 165°F. If you're cooking the kebabs in the oven, bake for 25-30 minutes or until the chicken is cooked through.
- Serve immediately with your favorite side dish.
