Ingredients:
- 4 large flour tortillas
- 6 large eggs
- Salt and pepper
- 1/4 cup milk (can substitute with dairy-free milk)
- 1/2 cup cooked and crumbled breakfast sausage
- 1/2 cup shredded cheese
- 1/4 cup chopped green onions
- Cooking spray
Instructions:
- Preheat oven to 350°F.
- In a mixing bowl, whisk together the eggs, salt, pepper, and milk until well beaten. Heat a large non-stick skillet over medium heat and coat with cooking spray.
- Pour the egg mixture into the skillet and cook, stirring frequently, until the eggs are scrambled and cooked through. Add the cooked sausage, shredded cheese, and green onions to the eggs, stirring until the cheese is melted and everything is combined.
- Lay a tortilla flat on a plate and spoon 1/4 of the egg mixture onto the center of the tortilla. Roll the tortilla up into a burrito, tucking the ends in, and place it on a baking sheet lined with aluminum foil. Repeat with the remaining tortillas and egg mixture.
