Ingredients
- 1 3/4 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or 1 cup milk with 1 tablespoon vinegar mixed in)
- 1 cup semi-sweet chocolate chips
Coconut-Pecan Frosting
- 1 cup sweetened shredded coconut
- 1 cup chopped pecans
- 1/2 cup evaporated milk
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 3 large egg yolks
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a Bundt pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
- In another bowl, cream together the granulated sugar, brown sugar, and butter until light and fluffy. Add in the eggs and vanilla, mixing until combined.
- Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk. Mix until just combined, then fold in the chocolate chips.
- Pour the batter into the prepared Bundt pan and smooth the top.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- For the frosting, combine the coconut, pecans, evaporated milk, sugar, butter, and egg yolks in a saucepan over medium heat. Cook, stirring constantly, until the mixture thickens, about 10-12 minutes. Remove from heat and stir in the vanilla.
- Once the cake has cooled, drizzle the coconut-pecan frosting over the top, allowing it to spill down the sides.
