Fluffy Yogurt Pancakes

These pancakes are light, airy, and oh-so-delicious! They come together quickly and are perfect for a lovely summer breakfast or brunch.
Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar (adjust to your taste)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup yogurt (plain or vanilla, preferably at room temperature)
- 1/4 cup milk (dairy or plant-based, adjust as needed)
- 1 tablespoon vegetable oil or melted butter
- 1 teaspoon vanilla extract
- Optional: Fresh fruits (blueberries, sliced bananas) and maple syrup for serving
Cooking Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the yogurt, milk, oil, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients. Gently stir until just combined; don’t overmix, as some lumps are okay!
- Heat a non-stick skillet or griddle over medium heat. Lightly grease it if necessary.
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set.
- Flip the pancake and cook for another 1-2 minutes until golden brown and fluffy.
- Repeat with the remaining batter, keeping finished pancakes warm in the oven if desired.
- Serve with your choice of toppings such as fresh fruit, yogurt, or a drizzle of maple syrup.
