Heat your waffle iron well and lightly butter it. A properly hot iron is the secret to crisp waffles.
Whisk together the corn flour, sugar, baking powder, baking soda, and salt.
In another bowl, whisk the eggs, buttermilk, melted butter, and vanilla.
Pour the wet mixture into the dry ingredients and stir just until combined. Rest the batter for 5 minutes so the corn flour can soften.
Spoon the batter into the hot waffle iron and cook until deeply golden and the steam slows, usually 3–5 minutes.
Serve immediately, or keep finished waffles on a rack in a low oven so they stay crisp.
For a **fancy orange-cardamom version**, add 1 teaspoon orange zest and 1/2 teaspoon ground cardamom.
For **honey-pecan waffles**, replace the sugar with 2 tablespoons honey and fold in 1/2 cup toasted chopped pecans.
For **brown-butter rosemary waffles**, brown the melted butter before adding 1 teaspoon finely chopped rosemary.
For **cheddar-chive waffles**, fold in 3/4 cup sharp cheddar and 2 tablespoons sliced chives; serve with poached eggs.
For **blueberry-lemon waffles**, add 1 teaspoon lemon zest and gently fold in 1 cup blueberries.
For **spiced pear waffles**, add 1/2 teaspoon cinnamon, a pinch of nutmeg, and 1/2 cup finely diced pear.
