Ground Turkey and Vegetable Skillet

This recipe is a healthy and budget-friendly dish that is perfect for a quick weeknight meal.
Ingredients:
- 1 lb ground turkey
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup frozen corn
- Salt and pepper, to taste
- Optional toppings: shredded cheese, salsa, sour cream
Instructions:
- Heat a large skillet over medium-high heat and add the olive oil.
- Add the ground turkey and cook, breaking it apart with a spatula, until it's browned and cooked through. Remove from the skillet and set aside.
- Add the onion and garlic to the skillet and cook until the onion is translucent.
- Add the chili powder and cumin to the skillet and stir to combine.
- Add the bell pepper, zucchini, and frozen corn to the skillet and cook until the vegetables are tender.
- Add the cooked ground turkey back to the skillet and stir to combine.
- Season with salt and pepper, to taste.
- Serve hot with your favorite toppings.
