Hearty Broccoli and Cheese Casserole

This delightful casserole is a favorite of mine for its comforting and savory flavors. It's perfect for a gathering or just a cozy meal for you and your fellow islanders.
Ingredients
- 4 cups fresh broccoli florets
- 1 cup whole wheat pasta (or your preferred type)
- 2 cups sharp cheddar cheese, shredded
- 1 cup cream cheese, softened
- 1 cup milk
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- Salt and pepper, to taste
- 1 teaspoon mustard powder (optional, for a little extra kick)
- 1/2 cup breadcrumbs (for topping)
- 2 tablespoons olive oil or melted butter (for drizzling on top)
Instructions
- Preheat your oven to 375°F (190°C).
- In a medium pot, cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large saucepan, bring a pot of salted water to a boil. Add the broccoli florets and blanch them for 3-4 minutes until tender but still bright green. Drain and set aside.
- In a large mixing bowl, combine the softened cream cheese, milk, garlic powder, onion powder, mustard powder, salt, and pepper. Stir until smooth.
- Add the cooked pasta and blanched broccoli to the bowl. Mix well to coat the pasta and broccoli in the cheesy mixture.
- Transfer this mixture into a greased 9x13 inch baking dish.
- Sprinkle the shredded cheddar cheese evenly over the top, followed by the breadcrumbs. Drizzle with olive oil or melted butter to help it brown.
- Bake in the preheated oven for 25-30 minutes or until bubbly and golden on top.
- Let it cool for a few minutes before serving.
