Ingredients
- 1 lb ground beef
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup bella mushrooms, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons paprika
- 2 tablespoons chili powder
- 1 tablespoon adobo sauce
- 1 teaspoon dried oregano
- 1 cup barbecue sauce
- 1 cup chicken stock
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, diced green onions, or chopped cilantro
Cooking Instructions
- In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat if needed.
- Add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3-5 minutes.
- Stir in the chopped mushrooms and cook until they release their moisture and start to soften, around 5 minutes.
- Sprinkle in the paprika, chili powder, adobo sauce, and oregano. Cook for an additional 2 minutes to let the spices bloom.
- Pour in the barbecue sauce and chicken stock, stirring to combine. Add both the kidney and black beans, bringing the mixture to a simmer.
- Reduce the heat to low, cover the pot, and let the chili simmer for 20-30 minutes, stirring occasionally. Season with salt and pepper to taste.
