This comforting dish brings together the tender texture of jackfruit with rich flavors reminiscent of a traditional pot roast. Perfect for a cozy dinner!
Ingredients:
- 2 cans (20 oz each) young green jackfruit in water or brine, rinsed and drained
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons soy sauce or tamari (for a gluten-free option)
- 1 tablespoon Worcestershire sauce (vegan if desired)
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- 1 teaspoon smoked paprika
- 2 bay leaves
- 2 medium carrots, sliced
- 3 medium potatoes, cubed
- Salt and pepper, to taste
Cooking Instructions:
- Begin by preparing the jackfruit. If using canned jackfruit, drain it and rinse it well. Cut off the tough core and shred the jackfruit with your fingers or a fork to create a pulled texture.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and continue to sauté for another minute until fragrant.
- Stir in the shredded jackfruit and cook for about 2-3 minutes, letting it soak in the flavors.
- Pour in the vegetable broth, soy sauce, and Worcestershire sauce. Add the thyme, rosemary, smoked paprika, bay leaves, and season with salt and pepper.
- Bring the mixture to a gentle simmer.
- Add the carrots and potatoes, stirring to combine. Cover the pot and let it simmer on low heat for about 30-40 minutes, or until the vegetables are tender and the flavors are well blended.
- Check the seasoning and adjust if necessary. Remove the bay leaves before serving.
