Heavenly Carrot Halwa

This rich and creamy Indian dessert is a delightful blend of carrots, milk, and sugar, spiced with fragrant cardamom and topped with crunchy nuts.
Ingredients:
- 4 cups grated carrots
- 4 cups whole milk
- 1 cup sugar (adjust to taste)
- 1/4 cup ghee (clarified butter)
- 1/4 cup chopped nuts (such as almonds and cashews)
- 1/2 tsp cardamom powder
- A pinch of saffron strands (optional)
- 2 tbsp raisins (optional)
Instructions:

In a heavy-bottomed pan, heat ghee and add the grated carrots. Sauté the carrots on medium heat until they turn aromatic and start to soften.

Pour in the milk and let the mixture simmer on low heat, stirring occasionally, until the carrots are cooked and the milk has reduced significantly.

Add sugar and mix well. Continue to cook the halwa until it reaches a thick, pudding-like consistency.

Stir in the cardamom powder and saffron strands for added flavor.

In a separate small pan, roast the chopped nuts until golden and fragrant.
