Ingredients
- 1 lb pork tenderloin
- 2 tbsp olive oil
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 2 cloves garlic, minced
- Salt and pepper, to taste
- 1 cup baby carrots
- 1 cup green beans, trimmed
- 1 medium red onion, cut into wedges
- 1 tsp balsamic vinegar (optional)
Cooking Instructions
- Preheat oven to 400°F (200°C).
- Mix olive oil, rosemary, thyme, garlic, salt, and pepper in a bowl.
- Rub the mixture onto the tenderloin and place it on a lined baking sheet.
- Toss the carrots, green beans, and onion in olive oil, salt, and pepper; spread around the pork.
- Roast for 25-30 minutes or until pork reaches 145°F (63°C).
- Optionally drizzle balsamic vinegar over veggies before serving.
- Let pork rest for 5 minutes; slice and serve with veggies.
