Cook the jasmine rice according to the package instructions. Set aside.
In a large mixing bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, sea salt, and black pepper. Mix well to create a marinade.
Add the chicken breasts to the bowl and coat them evenly with the marinade. Set aside for 10 minutes, allowing the flavors to penetrate the meat.
Heat a grill pan or skillet over medium-high heat. Add the marinated chicken breasts and cook for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C).

Divide the cooked jasmine rice among 4 meal prep containers. Top each portion with the grilled chicken and sautéed mixed vegetables.
Drizzle the Asian-inspired sauce over each bowl.
Garnish with chopped green onions.
