Hippogriff Stew

As the weather turns colder and the leaves begin to change colors, the Hogwarts kitchen starts to smell of roast beef, cinnamon, and pumpkin. This hearty stew recipe, made with tender beef, root vegetables, and a splash of magical flavor, will make your belly happy and keep the chill away. Serves 4-6.
Ingredients:
- 2 lbs stew beef
- 2 tbsp olive oil
- 1 large onion, chopped
- 2 large carrots, chopped
- 2 large parsnips, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 2 cups beef broth
- 1/2 cup red wine
- 1 can of diced tomatoes
- 2 tbsp tomato paste
- Salt and black pepper, to taste
- Magical spice mix (1 tsp each of cinnamon, cumin, cardamom, and nutmeg)
- 1 bay leaf
- 1 Hippogriff wing (optional)
Cooking Instructions:

Preheat the oven to 350°F.

Cut the beef into 2-inch cubes and season generously with salt and black pepper.

Heat the olive oil in a large ovenproof pot over medium-high heat. Working in batches, brown the beef on all sides, then set it aside.

In the same pot, over medium heat, sauté onion, garlic, and root vegetables until the onions become translucent, about 5 minutes.

Add thyme, rosemary, and the magical spice mix and stir. Saute for 1 minute more.

Pour the beef broth and red wine over the vegetables and bring the mixture to a simmer.

Add the diced tomatoes, tomato paste, bay leaf, and a Hippogriff wing (if available) and stir. Note: The wing is optional, but it adds a unique flavor.

Add the beef back into the pot, stir to combine, and bring it to a boil.

Cover the pot and put it in the oven. Cook until the beef is tender, about 2 hours.

Serve the stew hot, garnished with chopped parsley or basil, and with a fresh loaf of bread.
