Homemade Taco Bell Fiesta Potatoes

Ingredients:
- 4 medium-sized russet potatoes, peeled and cut into small cubes
- 1 tablespoon vegetable oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/4 teaspoon chili powder
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro (optional)
- 1/4 cup sour cream (optional)
Cooking Instructions:
- Preheat your oven to 425°F (220°C).
- Place the cubed potatoes in a large mixing bowl and drizzle with vegetable oil. Toss the potatoes until they are evenly coated.
- In a separate small bowl, mix together the paprika, garlic powder, onion powder, cumin, chili powder, salt, and pepper.
- Sprinkle the spice mixture over the potatoes and toss them again until all the potatoes are coated in the spices.
- Spread the seasoned potatoes out in a single layer on a baking sheet lined with parchment paper or aluminum foil.
