Heat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
Whisk together the pastry flour, oat flour, baking powder, and salt.
In another bowl, whisk the eggs, honey, vanilla, and melted butter or oil until smooth. Don’t skimp on the mixing here—it helps the honey spread its lovely flavor throughout.
Stir the dry ingredients into the wet just until combined. If the batter seems very thick, add milk or water one tablespoon at a time.
Gently fold in half the peaches. Pour the batter into the pan and scatter the remaining peaches over the top.
Bake for 32–38 minutes, until golden and a toothpick comes out clean or with a few moist crumbs.
