Whisk together the soy sauce, honey, vinegar, garlic, ginger, and black pepper. In a separate small cup, stir the cornstarch with the water.
Pat the chicken dry, dear, so it browns instead of steaming. Heat 1 tablespoon oil in a large skillet over medium-high heat. Cook the chicken for 5–7 minutes, turning occasionally, until browned and cooked through. Transfer it to a plate.
Add the remaining oil to the skillet. Stir-fry the mushrooms for 3 minutes, then add the broccoli and 2 tablespoons of water. Cover and steam for 3–4 minutes, until the broccoli is bright green and just tender.
Return the chicken to the skillet and pour in the honey-soy mixture. Stir in the cornstarch slurry and simmer for 1–2 minutes, tossing until the sauce turns glossy and coats everything.
Serve over rice with green onions and sesame seeds, if you like. Don’t overcook the broccoli—it should still have a little bite, bless it.
