Instant Pot Greek Chicken and Potatoes

Ingredients:
- 4-6 boneless, skinless chicken breasts
- 1 tablespoon of oil
- 2 teaspoons of garlic powder
- 2 cups of chicken broth
- 2 teaspoons of dried oregano
- 1/2 teaspoon of black pepper
- 1/4 teaspoon of salt
- 4-6 large potatoes, peeled and cubed
- 1 lemon, juiced
- 1/4 cup of feta cheese, crumbled
- Parsley, chopped fresh, for garnish
Instructions:
- First, set Instant Pot to sauté mode, pour oil into the pot, and cook until the oil is hot.
- Place chicken breasts into the Instant Pot, then sprinkle garlic powder, dried oregano, salt, and black pepper over the chicken.
- Pour chicken broth into the pot, coating the chicken.
- Add cubed potatoes to the Instant Pot and mix until they are coated with the broth mixture.
- Set Instant Pot on Manual/Pressure Cook mode and cook for 10 minutes.
- Once the Instant Pot is done cooking, let it naturally release pressure for 10 minutes before opening the valve to force the pot to release the remaining pressure.
- Transfer chicken and potatoes onto a serving dish, then pour the lemon juice over the dish.
- Sprinkle feta cheese and parsley on top of the dish.
