Jeffs Immunity Seafood Laksa Soup

Ingredients:
- 1 pound of fresh seafood (a mix of shrimp, snapper, and mussels)
- 1 tablespoon of vegetable oil
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 thumb-sized piece of ginger, grated
- 2 stalks of lemongrass, bruised and cut into 3-inch pieces
- 2 tablespoons of laksa paste
- 1 can (14 ounces) of coconut milk
- 3 cups of fish or vegetable broth
- 1 tablespoon of fish sauce
- 1 tablespoon of soy sauce
- 1 teaspoon of sugar
- Juice of 1 lime
- Salt and pepper to taste
- Rice noodles, soaked and cooked according to package instructions
- Fresh cilantro, chopped, for garnish
- Fresh lime wedges, for serving
- Sliced red chilies, for garnish (optional)
Instructions:
- In a large pot, heat the vegetable oil over medium heat. Add the sliced onion, minced garlic, grated ginger, and lemongrass stalks. Sauté until the aromatics are fragrant, about 2-3 minutes.
- Stir in the laksa paste and cook for another minute to release its flavors.
- Pour in the coconut milk and fish or vegetable broth. Bring the mixture to a boil and then reduce the heat to low. Let it simmer for 10 minutes to allow the flavors to develop.
- While the soup is simmering, prepare your seafood. Peel and devein the shrimp, cut the snapper into bite-sized pieces, and scrub the mussels under running water.
- Add the seafood to the pot along with the fish sauce, soy sauce, and sugar. Gently stir to combine. Allow the seafood to cook in the soup for 5-7 minutes, or until the shrimp are pink, the snapper is opaque, and the mussels have opened. Discard any unopened mussels.
- Squeeze in the juice of one lime and season with salt and pepper to taste. Give the soup a good stir.
