- 4 cups cauliflower rice (store-bought or homemade)
Instructions:
- In a large skillet, heat olive oil over medium-high heat. Add the beef strips and season lightly with salt and black pepper. Sear the beef until browned, about 2-3 minutes. Remove from the skillet and set aside.
- In the same skillet, add the chopped onion and cook until soft, about 3 minutes. Add the minced garlic and sliced mushrooms, cooking for another 4-5 minutes until the mushrooms are tender and have released their moisture.
- Pour in the beef broth and Worcestershire sauce, scraping the bottom of the skillet to deglaze. Allow it to simmer for 3-4 minutes to reduce slightly.
- Lower the heat and stir in the heavy cream and Dijon mustard. Let the sauce simmer for a couple of minutes until it thickens, adjusting seasoning with salt and pepper if needed.
- Add the cooked beef back into the skillet and stir to coat in the sauce. Cook for an additional 2-3 minutes until the beef is heated through.
- While the beef is cooking, prepare the cauliflower rice. You can sauté it in a separate skillet with a little olive oil for about 5 minutes until tender.
- Serve the beef stroganoff over the cauliflower rice and garnish with fresh parsley.
