Kole Sweet Czech Pastries

Ingredients

• 2 cups all-purpose flour
• 1/2 cup milk
• 1/4 cup sugar
• 2 teaspoons active dry yeast
• 1/4 cup unsalted butter, melted
• 1 large egg
• 1/2 teaspoon salt
• 1/2 cup fruit jam (plum, cherry, or your favorite)
• Optional: 1/2 cup sweet cottage cheese

Instructions

1. In a small saucepan, gently warm the milk until it's lukewarm. Stir in the yeast and a tablespoon of sugar, and let it sit for about 5 minutes until foamy.
2. In a large mixing bowl, combine the flour, remaining sugar, and salt. Create a well in the center and add the yeast mixture, melted butter, and egg.
3. Mix until a dough forms. If it's too sticky, add a bit more flour until it is manageable.
4. Knead the dough on a floured surface for about 5 minutes until smooth. Place it in a greased bowl and cover with a cloth. Let it rise in a warm place for about 1 hour, or until doubled in size.
5. Preheat your oven to 350°F (175°C).
6. Once risen, punch down the dough and roll it out on a floured surface to about 1/4 inch thick. Cut into circles (about 3 inches in diameter).
7. Place the circles on a baking sheet lined with parchment paper. Make a small indentation in the center of each circle using your thumb.
8. Fill the indents with a spoonful of fruit jam or sweet cottage cheese if you choose that option.
9. Allow the pastries to rise for another 20 minutes, then bake for 15-20 minutes until golden brown.
10. Let them cool slightly before enjoying.
