Lemon Herb Baked Cod with Asparagus

Baked Cod
- 3 cod fillets (about 6 oz each)
- 1 bunch asparagus, trimmed
- Juice of 1 lemon
- Zest of 1 lemon
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste

- 1 cup jasmine rice
- 2 cups water or vegetable broth
- Juice of 1 lime
- Zest of 1 lime
- 1/4 cup fresh cilantro, chopped
- Salt to taste
Side Dish 2: Steamed Broccoli with Lemon
- 2 cups broccoli florets
- Juice of 1 lemon
- Salt and pepper to taste

Prepare the Cilantro Lime Rice: (Total: 20 minutes)
- (0:00) In a medium saucepan, combine jasmine rice and 2 cups water (or vegetable broth) and bring to a boil.

- (0:20) Remove from heat, fluff with a fork, then stir in lime juice, lime zest, chopped cilantro, and salt to taste.

Preheat the Oven & Prepare the Cod and Asparagus: (Total: 10 minutes)
- (0:05) Preheat the oven to 400°F (200°C). On a baking sheet, arrange cod fillets and asparagus.
- In a mixing bowl, combine lemon juice, lemon zest, olive oil, garlic, thyme, salt, and pepper. Drizzle the mixture over fish and vegetables.
