Low Calorie Apple Strudel Recipe

Ingredients:
- 2 large apples, peeled, cored, and thinly sliced
- 1/4 cup granulated sugar substitute
- 2 tsp of ground cinnamon
- 1/2 tsp of nutmeg
- 1/4 cup golden raisins
- 1/4 cup chopped walnuts
- 8 phyllo dough sheets (thawed if frozen)
- Olive oil spray
Instructions:
- Preheat your oven to 350°F (175°C).
- Combine the sliced apples, sugar substitute, cinnamon, nutmeg, and golden raisins in a large bowl.
- Spread the chopped walnuts onto a baking sheet and toast them in the preheated oven for about 5 minutes, or until they are golden brown.
- Add the toasted walnuts to the bowl with the apple mixture and stir to combine.
- Lightly coat a sheet of phyllo dough with olive oil spray and place it on a large baking sheet. Repeat with the remaining phyllo dough sheets, layering them on top of one another.
- Spoon the apple mixture onto one end of the stacked phyllo dough, leaving a 1 inch border.
- Fold the sides of the phyllo dough in towards the center and carefully roll the dough up into a log shape.
- Carefully transfer the apple strudel to the baking sheet, with the seam side down. Lightly coat the top of the strudel with olive oil spray.
- Bake the strudel for approximately 25 to 30 minutes, or until the phyllo dough is golden brown and crispy.
- Once cooked, remove the strudel from the oven and let it cool for a few minutes before slicing and serving. Enjoy!
