Marijuana Arancini with Sweet Chili Sauce

These crispy rice balls filled with gooey cheese and infused with cannabis oil are irresistible, especially when served alongside a sweet chili dipping sauce!
Ingredients
For the Cannabis Oil (if not already prepared):
- 1 cup olive oil (or your choice of oil)
- 1/4 ounce (about 7 grams) cannabis, finely ground
For the Arancini:
- 2 cups cooked risotto (preferably made with parmesan and herbs)
- 1/2 cup shredded mozzarella cheese (or another cheese of your choice)
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (Panko works wonderfully for extra crunch)
- Salt and pepper, to taste
- Oil for frying (vegetable or canola)
For the Sweet Chili Sauce:
- 1/2 cup sweet chili sauce (store-bought or homemade)
- 1 tablespoon soy sauce (optional, for depth)
- 1 tablespoon lime juice (optional, for brightness)
- Fresh cilantro or green onions for garnish (optional)
Cooking Instructions
Step 1: Making Cannabis Oil (if needed)
- Infuse the Oil:
- In a small saucepan, combine the olive oil and finely ground cannabis.
- Heat over low heat for 2-3 hours, stirring occasionally. Make sure the oil doesn't exceed 200°F (93°C).
- After infusion, strain the oil through a fine mesh sieve or cheesecloth into a clean container, discarding the solid cannabis material. Allow the oil to cool.
Step 2: Prepare the Arancini

Mix the Risotto:
- In a large mixing bowl, combine the cooked risotto, 2 tablespoons of the cannabis oil (or infused butter if using), mozzarella cheese, salt, and pepper. Mix until well combined.

Form the Arancini:
- Take a small amount of the risotto mixture (about the size of a golf ball) and shape it into a ball. Repeat until all the mixture is used.

Prepare Breading Station:
- Set up three bowls: one with flour, one with the beaten eggs, and one with breadcrumbs.
- Roll each risotto ball in flour, dip in the beaten eggs, and finally coat in breadcrumbs, ensuring they are fully covered.

Fry the Arancini:
- In a deep frying pan, heat about 2 inches of oil over medium-high heat until hot (around 350°F or 175°C).
