Marinated Steak and Cheese Tacos

These irresistibly flavorful steak and cheese tacos feature tender and marinated flank steak, gooey melted cheese, and fresh pico de gallo all wrapped up in a warm tortilla. They're perfect for taco night, or anytime you're in the mood for a quick and satisfying meal!
Ingredients
- 1 lb flank steak
- 2 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- salt and pepper, to taste
- 8-10 small tortillas
- 2 cups shredded Mexican blend cheese
- pico de gallo, for serving
Instructions

In a large resealable bag, combine the olive oil, lime juice, minced garlic, chili powder, ground cumin, salt, and pepper. Add the flank steak to the bag and seal, squeezing out any excess air. Massage the steak in the bag to ensure it's evenly coated in the marinade. Refrigerate for at least 30 mins, or up to 4 hours.

Preheat a grill or grill pan to medium-high heat. Remove the steak from the bag and discard the remaining marinade. Grill the steak for 4-6 minutes per side, or until it reaches your desired level of doneness. Let it rest for 5 minutes before slicing thinly against the grain.

Warm the tortillas in the microwave or on the stove. On each tortilla, layer some of the shredded cheese, sliced steak, and pico de gallo.

Optional step: If desired, fold tortillas in half and cook in a skillet over medium heat until the cheese has melted and the tortilla is crispy and golden brown. Alternatively, you can enjoy the tacos uncooked if you prefer a softer tortilla.
