Mediterranean Chicken and Tomato Bake

This dish is a comforting blend of tender chicken thighs, sweet potatoes, vibrant tomatoes, and hearty broccoli, all baked together with fragrant herbs. It’s perfect for a cozy meal!
Ingredients
- 2 chicken thighs, skin-on or skinless
- 1 cup salad tomatoes, chopped
- ½ cup frozen sweet potato chunks
- ½ cup frozen mixed peppers (or your choice of frozen veggies)
- ½ cup frozen broccoli
- 1 can (400g) tinned tomatoes
- 1 tablespoon tomato puree
- 2 cloves lazy garlic (or to taste)
- 1 teaspoon dried Italian herbs (like oregano, basil, and thyme)
- Salt and pepper to taste
- Olive oil for drizzling
- Fresh herbs (like parsley or basil) for garnish, if desired
Instructions
- Preheat your oven to 400°F (200°C).
- In a small baking dish, place the chicken thighs and season with salt, pepper, and half of the herbs.
- Add the chopped salad tomatoes, frozen sweet potatoes, mixed peppers, and broccoli around the chicken.
- In a separate bowl, mix the tinned tomatoes, tomato puree, lazy garlic, and the remaining herbs. Pour this mixture over the chicken and vegetables.
- Drizzle a bit of olive oil over everything for extra flavor.
- Cover the baking dish with foil and bake for 25 minutes.
- After 25 minutes, remove the foil and bake for another 15-20 minutes, or until the chicken is cooked through and the veggies are tender.
- Optional: Garnish with fresh herbs before serving.
