Mediterranean Quinoa Salad with Feta

Ingredients
- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1 cup kalamata olives, pitted and sliced
- 1 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped (optional)
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Cooking Instructions
- In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce the heat to low. Cover and let simmer for 15 minutes, or until the water is absorbed and the quinoa is fluffy.
- Once cooked, fluff the quinoa with a fork and let it cool for a few minutes.
- In a large bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, olives, feta cheese, parsley, and mint.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Add the cooled quinoa to the vegetable mixture and drizzle the dressing over the top. Gently toss to combine everything.
- Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
