Ingredients
- 2 cups cooked chicken, shredded (rotisserie chicken works well!)
- 1 cup corn kernels (frozen or fresh)
- 1 cup black beans, drained and rinsed
- 1 cup diced potatoes (or potato cubes)
- 1 red bell pepper, diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- 1 cup chicken broth
- 1 cup heavy cream (or a dairy-free alternative)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 package refrigerated pie crusts (or homemade if you prefer)
- 1 cup shredded cheese (like cheddar or Monterey Jack)
Instructions
- Preheat your oven to 425°F (220°C).
- In a large skillet, heat olive oil over medium heat. Add diced onion and bell pepper; sauté until softened, about 5 minutes.
- Stir in minced garlic, cumin, chili powder, and smoked paprika. Cook for another minute until fragrant.
- Add the shredded chicken, corn, black beans, potatoes, chicken broth, and heavy cream. Stir well and let it simmer for about 10-15 minutes, or until the potatoes are tender. Season with salt and pepper to taste.
- Roll out one pie crust and place it in a pie dish. Pour the chicken mixture into the crust and sprinkle cheese on top.
- Roll out the second pie crust and place it over the filling. Seal the edges by crimping with a fork. Cut a few slits on top to allow steam to escape.
- Bake in the preheated oven for 30-35 minutes or until the crust is golden brown.
- Remove from the oven and let it cool slightly before serving.
