Mexican Mac and Cheese Casserole

Backstory: This recipe merges the classic and beloved mac and cheese with bold Mexican flavors and ingredients. It’s perfect for a cozy family dinner or a potluck party, and it blends together two contrasting culinary worlds in an exquisite and creative way.
Ingredients
- 1lb elbow macaroni, cooked according to package instructions
- 1lb ground beef or turkey
- 1 tbsp of olive oil
- 1 medium onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, diced
- 1 jalapeno pepper, seeded and minced (optional)
- 1 tbsp of chili powder
- 1 tsp of ground cumin
- 1 tsp of dried oregano
- Salt and pepper, to taste
- 1 can of diced tomatoes
- 1 can of black beans, drained and rinsed
- 1 cup of fresh or frozen corn kernels
- 1/2 cup of chopped fresh cilantro
- 4 cups of shredded Mexican blend cheese
- 1/2 cup of panko breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the macaroni according to the package instructions and set it aside once cooked.
- In another large skillet, heat the olive oil over medium-high heat.
- Add the ground beef (or turkey) and cook for 5 to 7 minutes, stirring occasionally, until fully cooked.
- Add the onion, garlic, red bell pepper, jalapeno pepper, chili powder, cumin, oregano, salt and pepper and saute for another 5 minutes, until the vegetables are tender.
- Add the diced tomatoes, black beans, and corn to the skillet and cook everything together for another 5 minutes.
- In a large bowl, combine the cooked macaroni and the beef mixture.
- Stir in the chopped cilantro and 2 cups of shredded cheese.
- Transfer the mac and cheese mixture to a 9x13 inch baking dish.
- Sprinkle the remaining 2 cups of cheese over top of the mac and cheese mixture.
- Sprinkle the panko breadcrumbs over the cheese layer.
- Bake the casserole for 25-30 minutes or until the cheese is melted and golden brown on top.
- Remove from oven and let it rest for a few minutes before serving.
