Mexican-English Shepherds Pie is a fusion dish that combines the comfort of a classic English Shepherd's Pie with the bold flavors of Mexican cuisine.
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 2 cups broccoli florets
- 4 large potatoes, peeled and chopped
- 1/4 cup milk
- 2 tbsp butter
- 1 tbsp olive oil
- 1 red bell pepper, diced
- 1 jalapeño pepper, diced (de-seed for less heat)
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper, to taste
- 1/2 cup cheddar cheese, shredded
- Fresh cilantro, chopped (optional)
Instructions:
- Preheat your oven to 375°F.
- In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and jalapeño and sauté until the vegetables are soft and tender.
- Add the ground beef and cook until browned. Drain off any excess fat from the pan.
- Add the Worcestershire sauce, beef broth, cumin, and chili powder and stir to combine. Let the mixture simmer until the liquid has been reduced and the sauce has thickened.
- While the beef mixture is simmering, boil the potatoes in a pot of salted water until soft.
- Mash the potatoes with the milk and butter until smooth and creamy. Season with salt and pepper to taste.
- Add the broccoli florets to the beef mixture and cook until tender.
- Transfer the beef and veggie mixture to a baking dish and spread the mashed potatoes on top, making sure to cover the entire surface.
- Sprinkle the shredded cheese on top of the mashed potatoes.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on top and the cheese is melted and bubbly.
- Garnish with fresh cilantro, if desired. Serve hot and enjoy!
