Miso Sweet Potato and Spinach StirFry

Ingredients
- 2 medium sweet potatoes, peeled and diced
- 2 cups fresh spinach, washed and stems removed
- 2 tablespoons miso paste (white or yellow)
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon olive oil
- 1 teaspoon garlic, minced
- Salt and pepper, to taste
- Sesame seeds, for garnish
- Green onions, chopped (optional, for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the diced sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer.
- Roast the sweet potatoes in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized.
- In a small bowl, whisk together miso paste, soy sauce, and sesame oil until smooth to create the dressing.
- In a large skillet or wok, heat the sesame oil over medium heat. Add the minced garlic and sauté until fragrant (about 30 seconds).
- Add the fresh spinach to the skillet and stir-fry until just wilted (about 2-3 minutes).
- Once the sweet potatoes are done, add them to the skillet with the spinach, pour the miso dressing over the top, and gently mix until everything is well coated and heated through.
- Serve warm, garnished with sesame seeds and chopped green onions if desired.
