This recipe is perfect for a quick and easy weeknight dinner. It's simple to make and includes all the protein and nutrients you need for a well-balanced meal.
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (carrots, broccoli, and cauliflower work well)
- 2 tbsp. olive oil
- 2 tsp. garlic powder
- 1 tsp. dried thyme
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (205°C).
- Arrange the chicken breasts on a baking sheet lined with parchment paper.
- Season the chicken evenly with garlic powder, thyme, salt, and pepper.
- Toss the mixed vegetables in olive oil and spread them around the chicken on the baking sheet.
- Season the vegetables with salt and pepper.
- Bake for 20-25 minutes or until the chicken is cooked through and the vegetables are soft and crispy.
- Let the chicken rest for a few minutes before slicing and serving with the vegetables.
