OnePot Italian Spicy Rice with Chicken and Shrimp

This delicious one-pot dish brings the lovely flavors of Italy right to your table while keeping things simple! Perfect for family gatherings or a cozy dinner at home.
Ingredients
- 2 chicken breasts (about 500 g), diced
- 250 g shrimp, peeled and deveined
- 300 g long-grain rice (e.g., Basmati or Jasmine)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, diced (preferably red or yellow)
- 400 g diced tomatoes (canned)
- 750 ml chicken broth
- 2 tbsp olive oil (about 30 ml)
- 1 tsp red chili flakes (adjust to taste)
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot or skillet over medium heat. Add the diced onion and bell pepper. Sauté until softened, about 3-4 minutes.
- Add the minced garlic and red chili flakes, stirring for another minute until fragrant.
- Add the diced chicken to the pot and cook for about 5-7 minutes, until it's browned and cooked through. Season with salt, pepper, and Italian seasoning.
- Stir in the rice, making sure it gets well-coated with the flavors.
- Pour in the diced tomatoes and chicken broth, stirring everything together. Bring to a boil.
- Reduce the heat to a simmer, cover the pot, and let it cook for about 15 minutes.
- After 15 minutes, add the shrimp to the pot, gently mixing them in. Cover and cook for an additional 5-7 minutes, or until the shrimp are pink and the rice is tender.
- Remove from heat and let it sit for a few minutes before fluffing with a fork. Garnish with fresh chopped parsley before serving.
