OnePot Mexican Rice

This recipe is inspired by the flavors of a classic Mexican rice dish! It's easy, quick, and made with pantry staples.
Ingredients:
- 1 cup long-grain white rice
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes, drained
- 1 cup frozen corn
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 2 cups vegetable broth
- Salt and pepper, to taste
Instructions:

In a large skillet or pot, sauté the onion and garlic until the onion is translucent, about 5 minutes.

Add the rice and cook, stirring constantly, until the rice is lightly browned, about 3 minutes.

Stir in the spices, black beans, diced tomatoes, and frozen corn.

Add the broth and bring to a boil. Reduce heat to low, cover, and simmer until the rice is tender and the liquid is absorbed, about 20-25 minutes.

Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork and season with salt and pepper, to taste.
This Mexican rice is delicious on its own, or as a side dish for grilled chicken or steak. Enjoy!
