Ingredients
Instructions
- 1
Cook the pasta according to the package instructions until al dente. Drain and set aside.
- 2
Heat olive oil in a large skillet or frying pan over medium heat.
- 3
Add the chopped onion and minced garlic to the pan and sauté until translucent and fragrant.
- 4
Increase the heat to medium-high and add the mixed vegetables to the pan. Cook until they are tender-crisp, about 4-5 minutes.
- 5
Add the cooked pasta to the pan with the vegetables. Season with salt, pepper, dried oregano, and dried basil. Toss everything together to combine.
- 6
Press down on the pasta mixture with a spatula to create a flat, even layer in the pan.
- 7
Let the pasta cook undisturbed for about 5-7 minutes, or until the bottom is crispy and golden brown. Flip the pasta over in sections, using a spatula, to allow the other side to crisp up as well.
- 8
Once the pasta is evenly crispy on both sides, remove from heat.
- 9
Serve the Pan-Fried Crispy Pasta with any optional toppings you desire, such as freshly grated Parmesan cheese or chopped fresh herbs.
