PanSeared Dover Sole with Capers Butter Prawns Cherry Tomatoes and Almonds

Ingredients:
- 4 Dover sole fillets (skin off)
- 16 large prawns, peeled and deveined
- 1 cup cherry tomatoes, halved
- 2 tablespoons capers
- 2 tablespoons sliced almonds
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Season the Dover sole fillets and prawns generously with salt and pepper on both sides.
- Heat a large skillet over medium-high heat, and add the olive oil and 2 tablespoons of butter.
- Once the butter has melted, add the Dover sole fillets to the skillet and cook for 3-4 minutes per side, until golden brown and cooked through. Remove the cooked fillets from the skillet and set them aside.
- In the same skillet, add the remaining butter and melt it.
- Add the minced garlic to the skillet and sauté for about 1 minute until fragrant.
- Add the prawns to the skillet and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the prawns from the skillet and set them aside with the cooked Dover sole fillets.
- In the skillet, add the cherry tomatoes and capers. Sauté for about 2-3 minutes until the tomatoes start to soften.
- Return the cooked Dover sole fillets and prawns back to the skillet, and add lemon juice. Gently swirl the skillet to combine the flavors and coat the fish and prawns.
- Sprinkle the sliced almonds over the fish and prawns, and cook for an additional minute.
- Remove the skillet from heat and transfer the Dover sole fillets, prawns, cherry tomatoes, capers, and almonds to serving plates.
- Garnish the dish with chopped fresh parsley.
- Serve hot along with your favorite sides like steamed vegetables, mashed potatoes, or a salad.
