- 1 cup peach puree
- 1/2 cup peach powder
- 1 cup plain yogurt (Greek or regular)
- 1 cup granulated sugar
- 3 large eggs
- 1/2 cup vegetable oil
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: powdered sugar for dusting or fresh peaches for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large mixing bowl, whisk together the peach puree, peach powder, yogurt, and sugar until smooth.
- Add the eggs, vegetable oil, and vanilla extract to the bowl. Mix well until fully combined.
- In another bowl, sift together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix!
- Pour the batter into the prepared baking pan and spread evenly.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Once cooled, dust with powdered sugar or top with fresh peach slices if desired.
