Ingredients
- 4 large portobello mushroom caps
- 3 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 4 whole-grain burger buns
- 4 ounces goat cheese, softened
- 2 cups fresh arugula
- Optional toppings: roasted red peppers, sliced tomatoes, or avocado
Cooking Instructions
- In a shallow dish, whisk together the balsamic vinegar, olive oil, garlic powder, salt, and pepper to create a marinade.
- Place the portobello mushroom caps in the marinade, ensuring they are well coated. Let them marinate for about 30 minutes.
- Preheat your grill or grill pan over medium heat.
- Once marinated, place the mushroom caps on the grill, stem side down, and cook for about 5-7 minutes. Flip and continue cooking for another 5-7 minutes, until they are tender and have nice grill marks.
- While the mushrooms are grilling, toast the whole-grain burger buns on the grill for a couple of minutes until they are lightly golden.
- Once the mushrooms are cooked, assemble the burgers: Spread goat cheese on the bottom half of each bun, place a grilled portobello cap on top, and pile on the fresh arugula. Add any additional toppings you desire, then close with the top half of the bun.
