Quinoa Arancini

If you're looking for a twist on traditional arancini, try making these delicious quinoa arancini! These little Italian rice balls are made with quinoa instead of rice, and are filled with gooey, melty mozzarella cheese. They're the perfect appetizer or snack!
Ingredients
- 1 cup cooked quinoa
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1 egg, lightly beaten
- Salt and pepper, to taste
- 4 oz fresh mozzarella cheese, cut into small cubes
- 1 cup flour
- 2 eggs, lightly beaten
- 1 cup seasoned breadcrumbs
- Vegetable oil, for frying
Instructions
- In a large mixing bowl, combine the cooked quinoa, Parmesan cheese, chopped basil, minced garlic, lightly beaten egg, salt, and pepper.
- Mix everything together until well combined.
- Divide the quinoa mixture into 12 equal portions.
- Take each portion and flatten it in your hand, making a small well in the center. Place a small cube of mozzarella cheese in the well, then close the quinoa mixture around the cheese, shaping it into a ball.
- Place the balls on a baking sheet and refrigerate for at least 30 minutes.
- In three separate bowls, prepare the flour, beaten eggs, and seasoned breadcrumbs.
- Roll each quinoa ball in the flour, shaking off any excess.
- Dip the balls in the beaten egg mixture, then roll in the breadcrumbs, making sure to evenly coat the entire ball.
- Heat vegetable oil in a large pot over medium-high heat until it reaches 350°F.
- Fry the quinoa balls in small batches for about 3-4 minutes, or until golden brown and crispy.
- Remove the quinoa balls from the oil and drain on a paper towel-lined plate.
- Serve hot with your favorite dipping sauce and enjoy!
