Ratman's Spicy Chicken Delight is a fusion of Indian and Mexican spices that is perfect for those who love their food with a bit of heat. Ingredients:
- 1 lb boneless, skinless chicken thighs, cut into 1-inch pieces
- 6 tablespoons butter
- 1 large onion, minced
- 4 cloves garlic, minced
- 2 teaspoons ground ginger
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon chili powder
- 1 teaspoon turmeric
- 1 teaspoon garam masala
- 1/2 teaspoon ground cayenne pepper
- 1 cup tomato puree
- 1 cup heavy cream
- Salt and freshly ground black pepper, to taste
- Fresh cilantro leaves, for serving
Instructions:

In a large skillet over medium heat, melt 4 tablespoons of butter and add minced onions and garlic. Cook until onions are softened and start to turn golden brown.

Add chicken pieces to the skillet and cook for 5-8 minutes or until browned on all sides.

In a separate bowl, mix together ginger, cumin, coriander, chili powder, turmeric, garam masala, and cayenne pepper. Add the spice mixture to the skillet and cook for an additional minute, stirring constantly.

Pour in tomato puree and stir to combine. Bring the mixture to a boil and then reduce the heat to a simmer. Simmer for 10-15 minutes, stirring occasionally, until the sauce has thickened.

Pour in heavy cream and stir to combine. Let it simmer for another 5-10 minutes, stirring occasionally.
