Sardine and Avocado Sushi Rolls

Backstory
This sushi roll pays homage to traditional Japanese sushi while infusing it with ingredients that support gut health. Sardines are rich in omega-3 fatty acids and combine beautifully with creamy avocado, all wrapped up in nori for a delightful experience.
Ingredients
- 1 cup sushi rice
- 1 ¼ cup water (for cooking rice)
- 1 can sardines in olive oil, drained
- 1 ripe avocado, sliced
- 1 cucumber, julienned
- 4 sheets nori (seaweed)
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon pickled ginger (for garnish)
- Kimchi (for serving)
- Sesame seeds (optional, for garnish)
Cooking Instructions

Prepare Sushi Rice:
- Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions. Once cooked, let it cool slightly.

Prepare Filling:
- Slice the avocado and julienne the cucumber. Drain the sardines and keep them ready.

Assemble Sushi Rolls:
- Place one sheet of nori, shiny side down, on a bamboo sushi mat or a clean surface. With wet hands, take about ½ cup of sushi rice and spread it evenly over the nori, leaving about an inch at the top edge.
- Lay a few slices of avocado, some cucumber sticks, and a sardine or two across the center of the rice.

Roll:
- Start rolling the sushi tightly from the bottom edge of nori, using the mat to help shape it. Roll until the edge of the nori meets the rice. Use a little water on your fingers to seal the edge of the nori.

Slice and Serve:
- With a sharp, wet knife, slice the sushi rolls into bite-sized pieces. Arrange on a platter and garnish with sesame seeds if desired. Serve with soy sauce and pickled ginger on the side, along with kimchi.
