Shepherds Pie

Shepherd's Pie is a classic comfort dish that is perfect for a cozy night in. The creamy mashed potato topping pairs perfectly with the hearty beef and veggie filling.
Ingredients:
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 1 tbsp tomato paste
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Worcestershire sauce
- 1 cup beef broth
- 2 cups broccoli florets
- 4 large potatoes, peeled and chopped
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 375°F.
- In a large skillet or saucepan, brown the ground beef over medium heat. Add the onion, garlic, and carrots and sauté until the vegetables are tender.
- Add the tomato paste, diced tomatoes, Worcestershire sauce, and beef broth and stir to combine. Let the mixture simmer until the liquid has been reduced, and the sauce has thickened.
- While the beef mixture is simmering, boil the potatoes in a pot of salted water until soft.
- Mash the potatoes with the milk and butter until smooth and creamy. Season with salt and pepper to taste.
- Add the broccoli florets to the beef mixture and cook until tender.
- Transfer the beef and broccoli mixture to a baking dish and spread the mashed potatoes on top, making sure to cover the entire surface.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on top.
- Serve hot and enjoy!
